A lot of people make the new years resolution to eat healthy, and it's amazing how little changes in your diet can make a huge difference. Now that I'm almost 8 months pregnant I wake up hungry, so skipping breakfast isn't an option. When I start the day with a healthy meal it usually helps me eat right throughout the rest of the day.
My favorite breakfast is a bowl of Quaker Oats Weight Management Oatmeal. It has added protein to keep you fuller longer and contains less sugar than other low-sugar options. Prior to pregnancy I used to make my oatmeal with water, but now I use milk (for extra protein and calcium) and I top it off with a handful of fresh blueberries. Those little changes have made my breakfast more nutritious and a little sweeter.
For a sweet snack I like to bake muffins. Homemade muffins taste sooo much better than the processed, packaged ones and you know exactly what ingredients go into them. I found a really delicious blueberry muffin recipe on Refined Mom blog. These muffins are super easy to make and they only require 9 simple ingredients.
Ingredients:
1 cup all purpose flour
1/2 cup sugar
1.5 teaspoons baking powder 
1/4 teaspoon salt 
1 egg (room temp) 
1/2 cup milk or half-half (room temp) 
3 tablespoons butter, melted 
1 teaspoon vanilla extract 
3/4 cup fresh blueberries 

Method: Preheat oven to 400 degrees. Line muffin pan or use cooking spray. Melt butter in a dish, set aside and let cool. Mix dry ingredients together and then add eggs, milk, butter, and vanilla. Don't mix your berries into the batter -- fill each muffin cup 1/3 of the way with batter and then place a few berries into each cup. Fill muffin cup to the top with the remaining batter. Cook for 15 minutes. Enjoy!

  8. I LOVE blueberries, especially fresh blueberry muffins. One of my favorite snacks is a small bowl of cereal with banana and blueberries. I love fruit in my cereal :)

  9. I'm addicted to blueberries! My hometown is known for them and I have a lot of childhood memories of going to pick them with my grandpa! Just patiently waiting for them to come back in season :)

  14. Wow, those muffins look so perfect. There's no comparison between fresh blueberries and the weird dried ones in ready-made mix! Blueberries are also amazing in smoothies (but not as tasty as a muffin obvi ha).

  19. i always make blue berry muffins before a house showing! it makes our house smell amazing and I leave them out on the stove so that the buyers are reminded how homey our kitchen in :-)

  23. i haven't tried that specific oatmeal, but i do love oatmeal and blueberries for breakfast. i want to try and see if i can make those muffins with gluten free flour.. yum!
