cornflake dreams.: cornflake cooks: veggie chili.

cornflake cooks: veggie chili.

It's snowing in Chicago. again. we're 20 inches OVER our normal snow totals (51" and counting). winter doesn't seem to be letting up anytime we have been making a lot of veggie chili lately. it is one of my favorite comfort foods during winter and a great way to eat lots of hearty veggies!

-chop, chop, chop all of your veggies! we use a few stalks of celery, a handful of baby carrots, 1/4 orange pepper (swap with green or red if you prefer), 5-6 cherry tomatoes and 1/2 onion. feel free to add any other veggies you want (corn, mushrooms...whatever!)
-spray your pan with pam or lightly coat with olive oil and sauté onions, carrots and celery
-after the hearty veggies look soft, add the cherry tomatoes and peppers
-after all the veggies cook for a few minutes together, add a drained can of black beans
-add one 14.5 oz. can of diced tomatoes, a packet of chili seasoning and 1/4 cup of water
-let everything cook together for 20 minutes, mix in a generous handful of chopped cilantro and enjoy!
i like to top my chili with crushed ritz crackers, cheese and plain non-fat yogurt (a great substitute for sour cream)

What is your favorite winter comfort food?

  1. Yum! Chili is definitely on my top 5. I love eating pho or won ton noodle soup, especially in cold weather. We have the BEST in Houston :) There's something about it that warms my soul and reminds me of grandma's house.

  2. Yum! We've been on a veggie only kick for a few month and this would be perfect to add to our recipe list!

  3. i haven't made chili in so long. mine is my favorite black bean & pumpkin chili.

  4. Looks totally perfect for a snow day and so scrumptious:) We usually go with soups or grilled cheese sandwiches during those freezing winter evenings but I am totally trying your recipe now :) xoxo

  5. This sounds perfect! I totally want this for dinner tonight!

  6. Yumm! I love a good veggie chili - the more veggies the better!

  7. soup is always my go to comfort cold weather food! I need a sous chef for all that chopping....or a Cuisinart either one! That looks so yummy!

  8. Yummm chili with cornbread is a winter fave for sure

  9. Luckily "winter" is relative in SF–but I go crazy for a spicy sweet potato stew when it's chilly!

  10. I would love this but my hubby is a typical man and has to have meat. Maybe I'll make it one day when he's out of town!

  11. This looks wonderfully comforting! My favorite wintertime food is a good ol' bowl of soup, so this is most definitely right up my alley!!

  12. chilli! i must have it in winter.
