I posted about brussels sprouts a few months ago, and I can't stop eating them. seriously. Lately I have been trying to incorporate them into at least one meal a week (thankfully h is a fan too). I love eating them on their own or mixing them with hearty roasted potatoes (perfect with scrambled eggs!)
- chop up your brussels sprouts and potatoes into bite-size pieces
- toss potatoes in a bowl with 1 tbsp. olive oil
- bake potatoes on a foil covered baking sheet for 20 minutes at 450 degrees. 
- remove the potatoes and flip them (so they get brown on both sides)
- toss brussels sprouts in 1 tbsp. olive oil
- add brussels sprouts with potatoes and finish in the oven for 20 minutes (or until crispy)
sprinkle with salt and pepper & enjoy! 

How do you cook your brussels sprouts?


  1. Those aren't my "go to" veggie mainly because I forget about them but this recipe looks really healthy and yummy. I think I may need to add that to my next shopping list! :-)

  3. I love to roast my brussels sprouts with a little olive oil & black pepper. but I love your addition of potatoes (my favorite veggie). I will absolutely be making this!! and your scrambled eggs looks scrumptious too. xo - chels @

  4. I have never had brussel sprouts. I feel kinda uncool right now. But, this looks so yummy and definitely makes me want to try them. The hubby and I usually stick with the usual stuff so it'll be nice to mix things up.

  8. Love getting all my sides done on one baking sheet. Brussels sprouts are always so good with a little Balsalmic vinegar and shredded Parmesan, too!

  9. Oh perfect I just have some brussels sprouts left over from last night's dinner - I made gnocchi with bacon, brussels sprouts, onion and cheddar cheese. So good.

  13. a simple roast with oil and salt and pepper plus a little lemon juice sprinkled over! just discovered that if you peel and chop up roasted butternut squash into little cubes, they take the exact same amount of time to roast as halved brussels sprouts. YUM.
