what's for dinner?

h usually gets home from work before i do, so he does the majority of cooking during the week and i do the dishes. last month we were starting to get into a dinner rut where we made the same thing every week (a rotation of tacos, pizza, estamble polo (an persian dish) and spaghetti -- all loaded with the same vegetables --  onions, green and red peppers and tomatoes). we needed to shake things up with new recipes that incorporated  different ingredients. 

bobby's stuffed bell peppers - (recipe adapted from the cooking channel show not my mama's meals) - i made a few changes to the original recipe, substituting ranch dressing powder instead of salsa and using greek yogurt not sour cream. we also added in a small handful of diced grape tomatoes for sweetness. 


Preheat the oven to 350 degree F. Start by cutting the peppers in half lengthwise, leaving the stems intact. Remove the seeds and ribs inside the peppers.

Heat a skillet to medium-high heat and add the olive oil and onions, cook for about 1 minute. Next add the ground beef and garlic and cook until the onions become translucent, about 6 minutes. Mix in and cook grape tomatoes for 2 minutes. 
In a separate bowl mix 1/2 packet of Ranch dressing seasoning, the rice, greek and yogurt. Add the ground beef mixture and combine thoroughly. Stuff the mixture into the peppers. Sprinkle each pepper half with 2 tablespoons of the cheese.
Place the stuffed peppers in a casserole dish, cover with foil and bake for 30 minutes. Remove the foil and continue to cook until heated through, 15 minutes. Top with basil and enjoy.
